  • 1 cup oat flour
  • 2 scoops vanilla protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 egg whites
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup mixed berries (blueberries, strawberries, raspberries)
  • Cooking spray or a small amount of coconut oil, for the pan

  1. In a large bowl, combine the oat flour, vanilla protein powder, baking powder, and salt.
  2. In another bowl, whisk together the egg whites, unsweetened almond milk, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  4. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or a small amount of coconut oil.
  5. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve the pancakes topped with mixed berries. Add optional add-ons like Greek yogurt, honey, or seeds as desired.
